Ingredients
- Chicken Breast (3 breasts, bone and skin removed, chopped)
Ingredients for Marinated
- Greek yogurt (2 tbsp)
- Olive oil (5 tbsp)
- Juice of a large onion (grate, squeeze, and keep the juice to use)
- Garlic (3 cloves)
- Rosemary (1 sprig)
- Dried thyme (1/2 tsp)
- Cumin (1/2 tsp)
- Paprika (1/2 tsp)
- Salt and pepper to taste
Other Ingredients
- Red pepper (1)
- Zucchini (1, medium)
- Mushroom (8)
- Olive oil (2 tbsp)
- Salt and pepper
Instructions
- Grate a large onion, squeeze out the juice, and add only the juice of the onion to a large bowl. Grate the garlic and add it to the bowl. Add 10 tbsp of olive oil, Greek yogurt, salt, and all the spices, and mix well. Add the diced chicken breasts and mix thoroughly. Cover this bowl with cling film and leave it in the refrigerator for at least 1 hour.
- Chop all the vegetables in the other ingredients except mushrooms into medium thicknesses and sizes. Mix these vegetables with 2 tbsp olive oil, salt, and pepper.
- Preheat the oven to 180°C / 356°F.
- Thread the skewers alternately with mushrooms, vegetables, and chicken. Continue until all the ingredients are used up. Line a baking tray with baking paper. Place this tray in the middle of the oven and place an oven wire rack on it. Arrange skewers on the wire rack, then bake for 20-25 minutes and serve.
