The main ingredient, of course, is goat testicles, also known as lamb’s fries or sweetbreads. These are essentially the reproductive organs of male goats, which are considered a delicacy in many parts of the world. They have a unique flavor and texture that’s hard to describe – imagine a cross between scallops and chicken liver, with a hint of sweetness. To start, you’ll need two goat testicles, cleaned and trimmed of any excess fat or connective tissue. You can either buy these at your local butcher shop or obtain them directly from the farmer who raised the goats. Once you have them, it’s time to get cooking! Here’s how to prepare the goat balls: 1. Cut the testicles into small pieces, about 1 inch in size. 2. In a large bowl, mix together some flour, paprika, garlic powder, salt, and pepper. 3. Dredge the goat pieces through the flour mixture, making sure they’re evenly coated. 4. Heat some oil in a deep frying pan over medium heat. When it’s hot, add the coated goat pieces and fry until golden brown – about 5 minutes per batch. 5. Remove the fried goat balls from the oil with a slotted spoon and place them on a paper towel-lined plate to drain any excess oil. Now that your goat balls are cooked, it’s time to serve them up! What’s for dessert? Let me tell you, these chocolate brownies are a real treat. Here’s my take on the classic recipe. First, preheat your oven to 350°F (180°C). Now, get a large mixing bowl and whisk together 1 cup (200g) of unsalted butter, softened, with 2 cups (250g) of sugar. Yes, it’s a lot of sugar, but trust me, these brownies need it. Next, crack in 4 large eggs and whisk until smooth. Now it’s time to bring in the chocolatey goodness! Melt 1 cup (120g) of dark chocolate chips or chunks with 1/2 cup (60g) of unsalted butter in a double boiler or in the microwave in 30-second increments, stirring between each interval. Once melted and smooth, let it cool slightly before whisking it into the sugar mixture. Don’t overmix! Now it’s time for the flour – 1 1/2 cups (190g) of plain all-purpose flour, to be exact. Whisk until just combined, then stir in a pinch of salt. Pour the batter into an 8-inch (20cm) square baking pan lined with parchment paper and smooth the top. Pop it in the oven for about 25-30 minutes or until a toothpick comes out with a few moist crumbs attached. Let those brownies cool completely in the pan before cutting them up and serving.
