Summer means long, hot days spent soaking up the sun and warm evenings spent relaxing with a tall glass of iced tea (or tub of vegan ice cream). Summer also means that it’s the perfect time to take advantage of all the seasonal produce that’s with us for only a short amount of time, like rhubarb!
Rhubarb comes into season in the late spring, and you can usually find it throughout the summer. Rhubarb has a bold, tart flavor that lends itself to pairings with sweeter fruits. But while most people use rhubarb like a fruit, it’s actually a perennial vegetable that can be used in savory dishes and desserts as well!
And when we say the words rhubarb and desserts, the mind jumps immediately to rhubarb’s best friend, strawberries. These two go together like peanut butter and jelly, like well, strawberries and rhubarb. That’s probably why these two got their own holiday. That’s right, June 9th is Strawberry Rhubarb Pie Day, and we want to celebrate this dynamic duo but limiting ourselves to pies just didn’t seem right. So here are our favorite vehicles for the classic seasonal couple: strawberries and rhubarb. Enjoy!
1. Classic Strawberry Rhubarb Pie
Nothing says ‘classic’ like a Classic Strawberry Rhubarb Pie — especially a strawberry rhubarb pie with a lattice crust. This is the kind of pie you’d expect to see cooling on a windowsill. The base is a decadently delicious buckwheat crispy crust that is chewy and sweet with just a touch of vanilla, and then it’s topped with two layers of a luxurious cashew cream, fresh rhubarb, and strawberries that have been tossed in lemon juice. It’s the fanciest Rice Krispies treat you’ll ever taste.
