  • One 15-ounce pack of extra-firm tofu.

For the Cashew Cheese:

  • 1/2 cup raw cashew nuts
  • 1/4 cup hot water
  • 1 tablespoon nutritional yeast
  • 1/4 teaspoon salt
  • 1/4 teaspoon lemon juice

Vegan Delight: A Cheesy Spinach Tofu Casserole Recipe (Gluten-Free, Plant-Based)

  1. Blend 1 cup of soaked cashews with a liquid of your choice, such as plant-based milk. Blend it smooth. Heat a saucepan over low heat and gently pour in the smoothie mixture.
