Tender chicken breasts and a medley of spices combine seamlessly in this comforting slow-cooker version of classic chicken tortilla soup. Four succulent chicken breasts are effortlessly transformed into a rich and indulgent slow-cooked masterpiece. Flavors of sautéed onions, pungent garlic, and the bold trio of spices – cumin, chili powder, and paprika – combine to elevate this dish to unparalleled heights.

  • Chicken breast (4 breast)
  • Garlic (3 cloves, minced)
  • Onion (1 large, chopped)
  • Chicken broth (6 cups)
  • Tomatoes (2 medium, peeled and finely chopped)
  • Heavy cream (1 cup)
  • Shredded yellow cheddar cheese (1 cup).
  • Fresh white cheddar cheese, finely shredded to measure 1/2 cup.
  • Black beans (1 cup)

Spices

  • Cumin (2 tsp)
  • Chili powder (1 tsp)
  • Paprika (1 tsp)
  • Salt and pepper to taste

To Garnish the Soup Bowl

  • Tortilla chips
  • Freshly halved cherry tomatoes (two per serving)
  • Fresh cilantro leaves, chopped finely to 1 tablespoon per serving.
  • A dollop of sour cream (about 1 teaspoon per serving)?

  1. Place the chicken breasts into the slow cooker.
  2. Combine the mixture with sliced onions, finely minced garlic, and a blend of aromatic spices, stirring thoroughly to combine all ingredients harmoniously.
  3. Add low-sodium chicken broth to the dish, then bring the heat to high and let it simmer for three hours without interruptions or disturbances.
  4. After three hours, remove the chicken breasts from the slow cooker, shred them into tender strands using a pair of forks, and then return the shredded meat to the slow cooker.
  5. Add tomatoes and black beans.
  6. Mix gently.
  7. Combine heavy cream, all the cheese, and fold gently to combine.
  8. Continue cooking at high heat for an additional 45 minutes.
  9. Serve the soup in bowls, accompanied by an optional topping of crispy tortilla chips and a dollop of creamy sour cream.
