Chili, Mint, and Bean Shoot Salad [Vegan]

Ingredients You Need for Chili, Mint, and Bean Shoot Salad

For the Salad

  • 1 small red onion, peeled and very finely sliced
  • 2 cups of fresh bean shoots (such as edamame sprouts)
  • 2 red capsicum peppers, core removed and thinly sliced
  • 1 cup of fresh mint leaves, thoroughly washed
  • 2 long red chillies, seeded and very finely sliced

Dressing

  • 2 tablespoons of vegan fish sauce
  • ½ tablespoon of minced ginger
  • 1 tablespoon of fresh lime juice
  • 1 ½ tablespoons of pure maple syrup

How to Prepare Chili, Mint, and Bean Shoot Salad

  1. Gather all ingredients.
  2. Combine the salad elements: sliced red onion, crisp bean shoots (like edamame sprouts), thinly sliced red peppers, fresh mint leaves, and seeded chillies. Mix gently in a large bowl.
  3. In a separate container or directly into the bowl at this stage, whisk together all dressing components – vegan fish sauce, ginger, lime juice, and maple syrup – until well blended.
  4. Add the dressing to the salad mixture, toss everything thoroughly to ensure even coating.
  5. For optimal texture, serve this vibrant salad immediately. Enjoy its crispness!

Notes

Remember that assembling just before serving helps maintain the desired crunchiness of the bean shoots and other elements.
