Cakes are something that vegans really miss out on especially in shops and restaurants. I decided to make my own delicious batch of chocolate chip vegan muffins. They taste amazing and they are really easy and quick to make. Next time you have a spare half an hour, give this recipe a try, you wont be sorry!

Ingredients You Need for Chocolate Chip Muffins [Vegan]
- 1/3 cup unsweetened almond milk
- 1 cup plain flour
- 1 tablespoon baking powder
- 1/2 cup caster sugar
- egg replacer for 2 eggs
- 3 oz vegan butter
- 2 tablespoons vanilla extract
- 2 tablespoons agave syrup
- ¼ cup vegan dark chocolate chips
- 2 teaspoons of water
How to Prepare Chocolate Chip Muffins [Vegan]
- Preheat oven to 400 degrees
- Empty the flour and milk into a dish and start mixing
- Add the baking powder and caster sugar
- In a separate dish or cup empty 2 tablespoons of egg replacer with ½ cup of water and mix this, then add to the rest of the ingredients mixed so far
- Add the vegan butter along with the vanilla extract and agave syrup and continue to mix
- Lastly add the chocolate chips and 2 further teaspoons of water
- Mix all contents either using a mixing spoon or blender
- Separate equally into a muffin tray
- Place in oven for 20 minutes or until they are well risen, golden brown and firm to the touch
