Richly flavored bread, toasted to perfection and infused with the warmth of cinnamon, pairs delightfully with the crunch of apples in this delectable vegan breakfast treat.

  • Two tablespoons of vegan butter or coconut oil.
  • 1 15-ounce can coconut milk
  • 1 cup vanilla almond milk
  • 1/4 cup of rich, velvety maple syrup (optional, yet highly encouraged for its unparalleled flavor enhancement)?
  • 1 teaspoon vanilla
  • Pinch salt
  • Six to eight slices of crusty, chunk-cut sourdough bread.
  • 1 tablespoon coconut oil
  • Two medium-sized apples, carefully cored and sliced into delicate, uniform strips.
  • 1 teaspoon cinnamon
  • Pinch salt
  • 2 tablespoons maple syrup

Crisp autumn mornings demand a breakfast that’s as cozy as they are. Ditch the ordinary and indulge in this indulgent vegan take on classic cinnamon apple French toast:

  1. Combine the coconut milk, almond milk, maple syrup, vanilla extract, and salt in a blender.
  2. Blend ingredients thoroughly for approximately 15 seconds.
  3. Position the mixture within a 9×9-inch baking dish or an ample-sized mixing bowl.
  4. Insert one to two substantial slices of bread into the container, permitting them to saturate for approximately thirty seconds.
  5. While heating a wide non-stick skillet or cast iron pan over medium heat, melt in the vegan butter.
  6. As the butter melts, carefully place two pieces of the rehydrated sourdough into the pan and cook for 3 to 5 minutes, or until a golden-brown crust forms on the bottom. Cook for an additional 2-3 minutes, until the opposite side is golden brown and slightly crispy, then flip again to ensure even cooking.
  7. Allow to cool slightly before serving, accompanied by the warm cinnamon apples, drizzle of pure maple syrup, and an additional pat of creamy vegan butter.
  1. With the remaining medium-heat sauté pan, add a small amount of melted coconut oil to prevent sticking, then gently introduce the sliced apples.
  2. Stirring occasionally, cook over medium heat for 5 minutes, or until tender.
  3. As the final minute of cooking ticks away, pour in the rich maple syrup, sprinkle a pinch of warm cinnamon, and season with a dash of salt to harmonize the flavors.
  4. Sprinkle sweet indulgence on top of the French toast.
