- 1 and 1/2 pounds sugar pie pumpkin
- 1 and 1/2 cups coconut milk
- 3/4 cup brown sugar
- 1 teaspoon ginger
- 1/2 teaspoon powdered cardamom
- Chopped nuts and cranberries to garnish
How to Prepare Coconut Pumpkin Halwa Pudding [Vegan]
- Peel and seed the pumpkin and cut into large pieces.
- Place the pumpkin and the coconut milk in a large heavy bottomed pot. Cover and simmer on low for about 40 minutes.
- Remove the cover, and mash the mixture until evenly mixture.
- Add in the sugar, ginger and powdered cardamom and cook for another 10 minutes until the mixture is thick, smooth and glossy.
- Cool slightly and serve garnished with nuts and cranberries.
