1 cup all-purpose gluten-free flour
1/2 cup cornstarch

  • 2 small-medium zucchinis
  • 1 small onion
  • 1 garlic clove
  • 2 Tbsp fresh parsley
  • 3/4 tsp salt
  • 1/4 tsp baking powder
  • 1/4 tsp black pepper
  • 1/2 cup rice flour
  • 1/4 cup nutritional yeast
  • 3 Tbsp flaxmeal
  • 3 Tbsp sesame seeds

Crisp and Delicious Vegan Sesame Zucchini Fritters Recipe (Gluten-Free)

  1. Preheat your oven to 425°F and lightly coat a baking sheet with oil, or use parchment paper for effortless cleanup.
  2. Combine onion, garlic, parsley, and zucchini in a food processor; pulse until the mixture is uniformly chopped.
  3. Combine the vegetables in a large bowl and incorporate all the dry ingredients, including baking powder, through flax meal. Stir well.
  4. Wet your hands slightly, as the mixture may become tacky, and shape into small, golf-ball-sized portions. Evenly spaced across the baking sheet, the treats are arranged, their tops generously garnished with a liberal sprinkling of sesame seeds.
