  • 2 tablespoons of olive oil
  • 2 cloves of garlic
  • 1-2 teaspoons of hot or smoked paprika (depending on desired level of heat)
  • 2 teaspoons of sweet paprika
  • Salt and pepper to taste
  • Water

Prepare Deliciously Simple Vegan Pumpkin Soup for a Cozy Fall Evening

  1. Prepare your vegetables by washing, peeling, and cutting them.
  2. Heat the olive oil gently in a pot until warm. 
  3. Allow the mixture to simmer gently, undisturbed, for a sufficient period of time, allowing the vegetables to reach optimal tenderness.
  4. Blend using an immersion blender or transfer the mixture to a traditional blender to ensure smooth consistency.
  5. Add ice and your favorite flavorings, then sprinkle a few coffee beans on top for the perfect cup.
