Fruity Pebble Ice Cream Sandwiches! I have your new favorite summer treat…they’re so easy to make, and you can mix and match your favorite ice cream flavors! Use your favorite breakfast cereal for this homemade ice cream recipe.

Fruity Pebble Ice Cream Sandwich Dessert Recipe

If you know me at all, you know Fruity Pebbles are my favorite cereal. I understand they’re more of a dessert than a breakfast food…but that’s probably why I love them so much. Any chance I get for a sweet treat in the morning with my coffee, I’ll take it!

And in my little world, Fruity Pebbles have slowly taken the place of sprinkles. gasp. But think about it… they look equally as cute, but they taste fruity and sweet, AND they can be eaten with a bowl of milk. I don’t see people sitting down in the morning with a bowl of sprinkles and milk.

I mean I wouldn’t hate that either…but you know…

Anyhow, I went ahead and made your new favorite summer treat. Just when you thought ice cream sandwiches couldn’t get any better, I got you.

These are just as simple as they look. And since this post is in no way sponsored or affiliated with Fruity Pebbles Cereal or Post Cereals, I might also add that you could (and should) TOTALLY mix and match your favorite cereals and ice creams!

Think about it…Cocoa Krispie cereal and cookie dough ice cream. YASS.

Cinnamon Toast Crunch cereal and Salted Caramel ice cream. DOUBLE YASS.

The “recipe” is simple…and more of a method, but I’ll walk you through what I did…

How to Make Fruity Pebble Ice Cream Sandwiches:

First you make a very basic (not too gooey) krispie treat recipe and press them into a 10×15 pan.

Cutting circles out of fruity pebbles

Using a large cookie cutter (or biscuit cutter) cut your shapes. Try to use up as much space as you can so you don’t have too many scraps. You can also re-form the scraps into more usable pieces.

I used Ice Cream Cake flavored ice cream, but strawberry would be phenom too!

Eat them immediately for the soft, chewy, ice cream sandwich, or freeze them for later and they get crunchy and delicious!

Description

Fruity Pebble Ice Cream Sandwiches! I have your new favorite summer treat…they’re so easy to make, and you can mix and match your favorite ice cream flavors! Use your favorite breakfast cereal for this homemade ice cream recipe.


  • 1/4 cup salted butter
  • 1 (10-ounce bag) mini marshmallows, approximately 6 cups
  • 6 cups Fruity Pebble cereal
  • 4 – 5 cups ice cream


  1. Lightly spray a 10×15 baking sheet with nonstick spray. Set aside.
  2. In a large pot over low heat, melt the butter. Once melted, add the marshmallows and stir constantly to melt. Once melted, remove from the heat and immediately add in the Fruity Pebble cereal, stirring to coat.
  3. Pour the Fruity Pebble mixture into the prepared pan and press evenly into the pan. Allow the mixture to cool (20-30 minutes) and then using a large biscuit or cookie cutter (I used a 3- inch cutter) cut the fruity pebbles into shapes. You can press the scrap pieces together and use all the cereal mixture.
  4. Scoop about 1/2 cup ice cream onto one of the cereal cut-outs and then press another on top, creating a sandwich.
  5. Serve immediately or wrap each ice cream sandwich into cling wrap and store in the freezer for up to a month.
