Now, add turmeric powder, red chili powder, garam masala powder, salt, and sugar. Stir-fry for about 10 minutes or until the vegetables are slightly tender.Now, add 2 cups of water and bring to a boil. Reduce the flame to low and let it simmer for 20-25 minutes or until the vegetables are cooked through. Garnish with coriander leaves and serve hot with rice or roti.
