  • 1 large zucchini
  • 1 large yellow squash
  • 10 ounces baby Portobello mushrooms
  • Avocado or olive oil for cooking (as preferred)

How to Prepare Grilled Ratatouille Kebabs

Follow these steps for perfectly grilled ratatouille kebabs:

  1. If using bamboo skewers, soak them in water for 3-5 minutes beforehand to prevent burning and breaking during cooking.
  2. Begin by chopping the ends off each vegetable (eggplant, zucchini, yellow squash). Slice the zucchini and yellow squash into thin rounds approximately 1/2-inch thick. For the eggplant, cut it slightly thinner than the other vegetables as they take longer to cook; slice it into rounds first, then quarter them for even-sized pieces.
  3. Separate stems from the baby Portobello mushrooms and wash thoroughly if necessary.
  4. Thread layers of zucchini, yellow squash, eggplant, and mushrooms onto your prepared skewers in a desired pattern or sequence.
  5. Preheat the grill to medium-high heat. Generously coat both sides of assembled kebabs with avocado oil (or another high-heat neutral oil) before grilling, then season lightly with salt, pepper, and optional red pepper flakes for enhanced flavor.
  6. During cooking, rotate the kebabs occasionally every 5 minutes or so to ensure even grilling. Keep applying a light spray of oil periodically as they cook; expect approximately 20 minutes total cooking time until vegetables are tender yet retain their grilled character.

  1. Line a baking sheet with parchment paper and preheat oven to 375°F (190°C).

  3. Bake for about 20-25 minutes until tender and slightly caramelized at the edges, rotating every 5-7 minutes to ensure even cooking throughout.
