Nourishing Green Protein Energy Bites: Vegan and Gluten-Free

What’s needed for these revitalizing treats? Roll up your sleeves and grab the following:

  • 1 cup almonds
  • 1/2 cup pistachios
  • 6 soaked figs
  • 1/2 cup dates
  • 1 cup coconut
  • 1 teaspoon of green powder
  • 1 tablespoon lucuma
  • 2 tablespoons agave
  • 1/4 teaspoon of ginseng powder

Crafting Nutrient-Dense Green Power Bites

  1. Initially process the nuts until they exhibit a slight breakdown, followed by the incorporation of additional ingredients, which should be processed until the mixture coalesces into a cohesive, sticky yet textured consistency.
  2. Form the mixture into bite-sized balls and then gently roll each one in shredded coconut to coat. Keep refrigerated at a temperature of 40°F (4°C) or below for up to two weeks.
