  • 2 teaspoons white vinegar
  • 2 small onions
  • 1 cup kale, chopped
  • 1 tablespoon olive oil
  • One cup of mashed sweet potatoes or white potatoes, portioned out.
  • 1 cup cooked Brussels sprouts, green beans, or broccoli (roasting enhances the natural sweetness of these vegetables)
  • Two boxes of high-quality, plant-based puff pastry.
  • One half cup of spreadable vegan cheese to suit your taste.
  • Cranberry sauce, for topping (optional)
  • Vegan gravy, for topping (optional)

Transforming Holiday Leftovers into a Vegan Tart?

  1. Preheat oven to 350°F.
  2. In a blender, combine the cashews, water, ground red pepper, and vinegar. Whisk the mixture vigorously on high speed to achieve a smooth, creamy consistency.
  3. Sear the onion and finely chopped kale in a moderate-sized skillet over medium heat, using a generous amount of high-quality olive oil. Cook until the onion is translucent and the kale leaves have softened.
  4. Position the two puff pastries side by side on a parchment-lined baking sheet.
  5. Split the cashew cream into two equal parts, and apply a delicate coating along the center of the puff pastry sheet.
  6. Subsequently, place the cooked potatoes within each flaky pastry. Drizzle a delicate coating of the cashew cream across the surface, maintaining a consistent thickness and allowing for a small border around the perimeter, reminiscent of a perfectly topped pizza crust.
  7. Place your favorite green vegetables atop this dish.
