Ingredients You Need for Home-Style Andean Cabbage Curry [Vegan]

  • 1 medium sized red or white onion, peeled and finely chopped
  • 1-inch piece fresh ginger, peeled and thinly sliced
  • 5 garlic cloves, peeled and finely chopped
  • 2 teaspoons ground cumin
  • 2 vegetables stock cubes
  • A pinch of ground black pepper
  • 1 medium sized cabbage, core removed, finely chopped (see tips for details)
  • A pinch of salt
  • 2 cups plus 1 cup of almond milk (see tips for substitutions)
  • 1 teaspoon Muscovado sugar
  • 2-3 tablespoons of olive oil
  • 7 tablespoons of unsalted and unsweetened smooth peanut butter or pumpkin seed butter (see tips below)
  • 1 small chili pepper, deseeded and finely chopped (optional)
  • A pinch of dried oregano
  • Juice of 1 lime
  • Juice of 1 lemon
  • A handful of washed and chopped cilantro leaves

Get ready for a flavorful twist on the classic Maggi noodles with this step-by-step guide on preparing Masala Maggi Noodles with two types of sauce! For the noodles, start by boiling 1 cup of water and add in the Maggi noodles. Cook for 2-3 minutes or until they are al dente. While the noodles are cooking, heat 1 tablespoon of oil in a pan over medium flame. Add in 1 small onion, finely chopped, and sauté till it turns translucent. Next, add in 1 teaspoon of ginger paste and 1 teaspoon of garlic paste. Cook for about 30 seconds or until the mixture is fragrant. Now, add in 2 teaspoons of Maggi masala powder and mix well. If you want a spicier version, add more as per your preference! Add in 1 cup of water to the pan and bring it to a boil. Reduce the flame to low and let it simmer for 5-7 minutes or until the sauce thickens. For the second type of sauce, heat another tablespoon of oil in a separate pan over medium flame. Add in 2 tablespoons of tomato puree and 1 teaspoon of Maggi masala powder. Mix well and cook for about 3-4 minutes or until the sauce thickens slightly. Now, it’s time to assemble! Place the cooked noodles on a plate, top with the first type of sauce (Masala Magic), followed by the second type of sauce (Tomato Magic). And that’s it! Serve hot and enjoy your delicious Masala Maggi Noodles with two types of sauce! SKIP
