Pasta is one of those dishes that we love to eat no matter the season — and luckily, there are enough different kinds of pasta and sauces out there that are designed specifically for summer, winter, fall, and spring — just check out these 7 Variations of Vegan Pasta for proof! When we think of spiralized veggie dishes, however, our minds automatically go to spring and summer. Noodles made out of produce like zucchini and cucumber just scream sunny, warm weather — but did you know there are plenty of autumnal veggies that can be made into successful and tasty noodle dishes as well?

It’s true — just check out How to Turn Any Vegetable or Fruit Into a Grain-Free Noodle to get an idea of the array of different vegetables that you’ve been neglecting in your spiralizing adventures (although you can also Make Pasta from Vegetables Without a Spiralizer). Nothing says comfort like a big bowl of warm and cozy veggie noodles in the fall. Our Food Monster App is loaded with different ideas, so sit back, relax, and learn about the delicious autumn produce you could be turning into pasta this season!

Squash

Okay, okay. So squash is technically a fruit, not a vegetable, and can be divided into both summer and winter categories. Winter squash is either round and elongated, or scalloped and pear-shaped, and it can be harvested once the cooler autumn weather settles in. Its flesh ranges from golden-yellow to brilliant orange, and we love turning it into hearty pasta.

Try out this vibrant and jewel-toned recipe for Spiralized Butternut Squash Noodles With Asparagus, Cashews, and Pomegranate. The noodles are roasted in the oven to al dente perfection and tossed with blanched asparagus, roasted cashews, and sweet-tart pomegranate seeds. This amazing dish is the perfect side or main to any holiday occasion.

We also suggest trying out this recipe for Russian Kale and Roasted Squash Noodles, or if you’re not in the mood for long, spaghetti-strand noodles but still want a pasta dish, try this No-Noodle Butternut Squash and Swiss Chard Lasagna.

Sweet Potato

Sweet potatoes are high in beta-carotene, as well as the antioxidant vitamins C and E, as well as vitamin B6, potassium, and manganese. To make sweet potato noodles, we suggest first peeling your sweet potatoes, and then using either a non-stick pan or putting in plenty of oil to ensure your sweet potatoes don’t stick together during the cooking process.

In this recipe for Buffalo Cauliflower With Sweet Potato Noodles, you’ll be able to use the versatile cauliflower creatively, as well as the sweet potatoes! And as for the buffalo cream sauce… well, it’s otherworldly! The cauliflower softens in the oven and soaks up the spicy flavors in the sauce.

We also recommend trying this recipe for Thai Peanut Sweet Potato Noodles for something new, or this gluten-free recipe for Sweet Potato Noodle Bolognese With Toasted Crushed Almonds.

Beets

We absolutely love the deep, rich color of beets and their earthy, unique taste. This superfood possesses a notable amount of vitamins and nutrients, work as a blood purifier, and is low in calories.

We love this recipe for Roasted Beet Noodles With Crispy Shallots — the crispy shallots are a great addition to the sweetly glazed beet noodles, as they add a saltiness and crispiness to the dish and keep the sweetness of the sparkling cider glaze at bay. The flavors and aromas of the beet really come out when roasted.

For another beet-noodle recipe, we suggest these Roasted Beet Noodles With Pesto and Baby Kale. Also, make sure to learn different ways to use this gorgeous ingredient by reading these 10 Simple Beet Recipes For The Fall.

Carrot

Not only are carrots crunchy and flavorful, but the health benefits of carrots are vast: not only are they rich sources of beta-carotene, which improves vision and reduces signs of premature aging, but they provide a rich amount of vitamins and minerals. Carrots also help reduce cholesterol, prevent heart attacks, and ward off certain cancers.

You can make carrots into noodles by following this recipe for Miso Roasted Tomatoes and Spiralized Carrot Noodles pictured above. Boiling carrot noodles makes them resemble a whole wheat spaghetti noodle; it’s actually pretty uncanny.
