This slow-cooker roast combines the flavors of Italy with tender ease, beginning with a substantial 7-pound pork shoulder – specifically, the shoulder blade, which yields an exceptional result.

Slow-cook the roast in a crock-pot with a layer of thinly sliced onions at the base, accompanied by a harmonious blend of Italian herbs and spices, sufficient water, and rich red wine for 9-10 hours.

Allow the dish to simmer on low for a prolonged period of 9-10 hours, or alternatively, cook it on high for a shorter duration of 6-7 hours, ensuring that the meat becomes tender and falls apart effortlessly.
