Ingredients
- Coconut flour (2 tbsp)
- Almond flour (5 tbsp)
- Pesto sauce (2 tbsp)
- Mozarella (1 cup, shredded)
- Butter (2 tbsp)
- Egg (1 whole + 1 egg yolk)
- Sesame seeds (1 tbsp)
- Baking powder (1/2 tsp)
- Salt to taste
Instructions
- Start by getting a deep, microwave-safe bowl. Put the shredded mozzarella in the bowl, then add the butter. Melt the cheese and butter together in the microwave.
- Mix the melted cheese and butter well. Add both flours to it, then add 1 whole egg, baking soda, and salt. Mix well and knead the mixture until it has a dough texture. Transfer it to a clean kitchen counter and roll it out with a rolling pin. Spread 2 tbsp of pesto sauce evenly on the upper surface of the dough with the help of a brush.
- Preheat the oven to 180°C / 356°F.
- Line a baking tray with greaseproof paper. Slice the dough lengthwise at 2cm intervals with a knife. Twist each dough slice lengthwise. Arrange the mozzarella twists on the baking sheet.
- In a small bowl, mix 1 egg yolk with 1 tbsp of sesame seeds. Apply the egg-sesame mixture on the mozzarella sticks with a brush.
- Place the tray in the oven and bake for 20 minutes, ensuring controlled baking.
Notes
When slicing the dough, you should get approximately 10 slices with these measurements. Since this recipe serves 5 people, one serving of mozzarella twist equals 2 twists.
The thickness of the dough should be 1/2 cm, and you can adjust its size to about 8 inches.
