The grill adds so much flavor itself that you don’t need to add a lot to your zucchini to get a rocking side dish that goes with just about anything.

Ingredient Notes

All of the ingredients to make delicious grilled zucchini.
  • Zucchini: You can grill zucchini and squash halved or in spears directly on the grill, or you can cut them into slices or chunks and grill them on skewers or in foil packets.
  • Lemon Juice: Use freshly squeezed for the best flavor.
  • Olive Oil: This helps to give you a little bit of that crisp texture and keeps the zucchini from sticking to the grill.
  • Garlic Powder: Adds the garlic flavor without the garlic burning.
  • Italian seasoning: Use store-bought Italian Seasoning or make your own blend.

Choosing a Good Zucchini

You are looking for three things: size, color, and stem. Smaller zucchini are better, as larger ones tend to be watery. When it comes to color, look for vibrant colors whether you are picking out a green zucchini or yellow squash. And last, look for the stem. Having a good amount of stem on your zucchini will help it last longer.

Grilling Tips

  • Zucchini should be cooked over a medium heat (about 350 degrees) on the grill for about 10 minutes, no matter how you cut the zucchini. It takes about 10 to 15 minutes for the zucchini to get tender.
  • Zucchini can be cooked on skewers by itself or alongside other vegetables. If you are using other vegetables on your skewer or meats, look for vegetables with similar cooking times like tomatoes, mushrooms, bell peppers, chicken, and steak cuts of beef.
  • To get cross-hatch marks on the zucchini, you can shift them slightly partway through grilling.

Storage Instructions

Refrigerate in an airtight container for up to three to four days.
