This mango salsa recipe is easy and delicious. It makes a great topping for grilled fish or chicken. This versatile recipe can also be served with tortilla chips and guacamole to serve to guests!

Why You’ll Love Fresh Mango Salsa

  • Quick and Easy! This Fresh Mango Salsa recipe is one of my most favorite summer recipes. It’s ready in just 10 minutes and can be made ahead!
  • Versatile! Serve it as an appetizer or as a side dish. It’s an amazingly easy appetizer to serve to guests, it’s super way to jazz up your favorite grilled chicken or pork. Or it’s out of control delicious on fish tacos! Fresh ingredients and easy prep make this perfect poolside to dip with tortilla chips or for a BBQ. 
  • Flavor! The sweet mango paired with cucumbers, red onion, garlic, cilantro, and red pepper is a flavor burst! Lime juice and salt really enhance the ingredients. It’s a sweet/savory salsa that makes everything better!

Fresh Mango Salsa Ingredients:

  • Ripe Mangoes. Mango is ripest here in New Jersey in the summer months, so that’s typically when I make this salsa, but you can buy frozen mango all year round and let it thaw to use for this recipe as well.
  • Red bell pepper. You can also use green, orange, or yellow bell pepper too!
  • Garlic. I always add a little minced garlic to all my salsa recipes and this is no exception.
  • Cucumber. Mild, crunchy cucumber is perfect in this recipe.
  • Jalapeno. You can use as little or as much jalapeno as you prefer. I usually use about 1/2 a jalapeno, but it depends on the size and how much heat you like!
  • Red onion or shallots. I prefer using red onion or shallots because they are a milder onion flavor. You can certainly use yellow, Spanish, white, or even Vidalia onions too.
  • Kosher salt. Salt just enhances all the flavors or the salsa.
  • Fresh lime juice. Lime juice pairs perfectly with the mango, but you can also use lemon juice as well. Just make sure to use fresh instead of bottled. It’s just better!
  • Chopped cilantro. I LOVE cilantro, but I know it’s one of those ingredients that people like or they REALLY don’t like. So if you happen to not be a cilantro fan you can add in some fresh chopped flat leaf parsley in its place or certainly omit it altogether.
  • Sugar. This is totally optional based on how sweet you like your salsa, or how sweet your mango is. You can add just a tablespoon to enhance the flavor or leave it out, totally up to you!

How To Cut A Mango:

I have 3 techniques that I prefer:

  1. First: Slice down the sides of the pit. The pit is a flat disk in the middle of the mango. With each half you can score the flesh in a cross pattern. Use a spoon to scoop out the mango from the skin. 
  2. Second: Slice down the sides of the pit. The pit is a flat disk in the middle of the mango. With each half you can score the flesh in a cross pattern. Use a knife to cut the mango away from the skin. This method works best if the mango is very ripe and soft. The spoon method might produce a less “diced” appearance. 
  3. Third: Slice down the sides of the pit. The pit is a flat disk in the middle of the mango. Use a spoon to scoop out the flesh of the mango and then dice on a cutting board. 

Can You Add Sugar?

Here’s the deal, mangos are sweet for sure, and while you don’t HAVE to add the sugar here, a little bit of sugar can add a depth of sweetness that really brings out the flavor of the mangoes, especially if they aren’t super ripe.

Easy Ways To Customize:

You can really make this mango salsa your own. Here are a few ideas on how to get creative:

  • Add avocado! Avocado would be amazing in this recipe! I just dice one up and add it right in with the rest of the ingredients. This salsa makes a great topper right on a bowl of guacamole too!
  • Amp up the spice. You can add more jalapeño for sure in this recipe if you love spicy! Even a few dashes of cayenne or jalapeño powder works great too!
  • Use another kind of fruit. Peaches or pineapple would be a great alternative to mangoes in this recipe. 
  • Add some tomatoes! If you prefer a more traditional style salsa, go ahead and add lots of diced tomatoes to this!
  • If you prefer a less “chunky” salsa you can add all the ingredients to a food processor or blender and lightly pulse a few times!

Easy Mango Salsa is going to be your new favorite summer recipe! Serve with chips as an appetizer or on grilled chicken or fish!


  • 3 medium mangos, diced
  • 1 cup diced red bell pepper
  • 1 clove garlic, minced
  • 1/2 cup diced cucumber
  • 1/2 jalapeno, diced
  • 1/3 cup diced red onion
  • 1/2 teaspoon kosher salt
  • 2 tablespoons fresh lime juice
  • 3/4 cup chopped cilantro
  • Optional – 1 tablespoon granulated, or more to taste

  1. In a medium bowl combine the mango, red bell pepper, garlic, cucumber, jalapeno, onion, sugar, salt,  lime juice, and cilantro. Stir to combine and add more sugar if desired. 
  2. Serve immediately.

Notes

Store airtight for up to 3 days

Serving ideas: with chips, on top of grilled chicken, fish or pork, on a salad, or a taco.
