Masala Oatmeal [Vegan]

Rolled oats? 1 cup
Almond milk? 2 cups
Water? 1 cup
Honey or maple syrup? 1 tablespoon
Ground cinnamon? 1/2 teaspoon
Ground cardamom? 1/4 teaspoon
Salt? a pinch
Chopped nuts or seeds (optional)? for garnish

  • 1/2 teaspoon olive oil
  • 1 teaspoon fennel seeds
  • 1 teaspoon chopped garlic
  • 1 cup chopped onions
  • One cup of chopped peas and carrots.
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon amchur powder (dry mango powder)
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garam masala
  • 10 cups water
  • 2 teaspoons salt
  • Three cups of dry-roasted quick oats.
  • 1 tablespoon of chopped fresh cilantro for garnish.

Here’s how to prepare a delicious and comforting vegan masala oatmeal:

  1. Heat oil in a non-stick saucepan over medium heat. Add fennel seeds and garlic. When the garlic begins to caramelize, introduce the onions and cook them until they reach a tender, translucent state.
  2. Add peas & carrots and rest of the spices and sauté well.
  3. Cook, covered, for an additional 2 minutes to ensure the carrots reach a tender consistency.
  4. Add water and cover. Bring the liquid to a rolling boil before adding a pinch of salt.
  5. Enhance the flavor profile by gradually reducing the heat and incorporating the nutty essence of roasted oats. Stir the mixture vigorously for exactly one minute to ensure thorough incorporation of the ingredients.
  6. Turn off the flame, and serve warm, garnished with a sprinkle of fresh cilantro.
