A California-based startup, Savor, has unveiled a revolutionary butter alternative created entirely without cows. Backed by Microsoft billionaire Bill Gates, Savor employs a thermochemical process that builds fat molecules using carbon dioxide, hydrogen, and oxygen. This innovation not only mimics the taste of traditional butter but also boasts a significantly lower carbon footprint—less than 0.8g CO2 equivalent per calorie compared to 2.4g for conventional butter.
Kathleen Alexander, CEO of Savor, emphasized their commitment to environmental impact reduction and anticipates regulatory approval for commercial sales by 2025. While meat and dairy alternatives have gained popularity, flavor often remains a concern. Savor, however, assures consumers that their butter replicates the exact taste profile of traditional butter through extensive taste panels.
Despite the environmental benefits and endorsements from figures like Bill Gates, the acceptance of lab-made fats presents a challenge. Encouraging consumers to adopt these alternatives over traditional dairy products may require overcoming initial skepticism. Yet, with its promise of sustainability and delicious taste, Savor’s air-based butter marks a significant stride towards achieving global climate goals, reducing greenhouse gas emissions from livestock farming, which currently accounts for 14.5% of global emissions according to the UN Food and Agriculture Organization.
