As a self-proclaimed sugar aficionado, I’ve long been susceptible to cravings first thing in the morning, making this recipe an ideal catalyst for behavioral change. Indulge in these scrumptious banana cacao cupcakes, a convenient treat that instantly gratifies your sweet tooth while providing the nutrients you need to stay energized throughout your busy day.

  • 4 Eggs (medium)
  • Oatmeal (Gluten-free, 1 cup)
  • Cacao Powder (2 tbsp.)
  • Stevia (4 sachets)
  • Banana (2 units)

To Garnish

  • Walnuts (4tbps)
  • Peanut Butter (2 tbsp.)

Kitchen Utensils

    1. Combine the eggs, ripe banana, rolled oats, unsweetened cocoa powder, and sweetener Stevia in a high-speed blender until smooth and creamy.
    2. Combine ingredients thoroughly to achieve a uniform consistency.
    3. Preheat the oven to 180C.
    4. Position the cupcake liners within a tray for optimal stacking and baking efficiency.
    5. Three-quarters of the molds are filled with the blended mixture.
    6. Add chopped walnuts to each cupcake mold.
    7. Bake the cupcakes for 15-20 minutes.
    8. After allowing the cupcakes to cool for exactly five minutes, gently spread a dollop of creamy peanut butter atop each one, then present them to your delighted guests.

Meanwhile, create a rich meat sauce by browning ground beef in a skillet, adding onion and garlic for added flavor, then mixing in canned tomatoes and tomato paste. Next, prepare the cheese mixture: combine ricotta with egg, salt, and pepper. Stir in grated Parmesan and mozzarella until well combined. In a separate bowl, mix softened butter with flour to create a smooth roux. Add milk and bring to a simmer before removing from heat. Now it’s time to assemble our masterpiece! Spread a thin layer of the meat sauce on the bottom of a 9×13-inch baking dish, followed by a layer of cooked lasagna noodles. Spoon over the cheese mixture, then dot with butter roux. Repeat this process two more times, finishing with a layer of melted mozzarella on top. Place the dish in the oven and bake for 35-40 minutes or until the cheese is golden brown and bubbly. Remove from heat and let it rest for at least 10 minutes before serving.
