Large flour tortilla
Crispy fried tofu cubes
Creamy peanut sauce
Mixed greens
Sliced cucumber

  • 1 wholemeal wrap
  • 100g tofu
  • 10g garlic and ginger paste
  • 4 teaspoons Tamari
  • 20g peanut butter

  1. Preheat the oven to 180 degrees Fahrenheit (or 80°C) and prepare a baking sheet by lining it with parchment paper or aluminum foil for easy cleanup.
  2. Slice the firm tofu into bite-sized cubes and arrange them evenly on a parchment-lined baking sheet.
  3. Cook the tofu for 20 minutes, turning each piece halfway through the cooking time.
  4. While blending, combine the garlic and ginger paste with tamari and peanut butter to achieve a harmonious mixture.

What’s for dessert? Let me tell you, these chocolate brownies are a real treat. Here’s my take on the classic recipe. First, preheat your oven to 350°F (180°C). Now, get a large mixing bowl and whisk together 1 cup (200g) of unsalted butter, softened, with 2 cups (250g) of sugar. Yes, it’s a lot of sugar, but trust me, these brownies need it. Next, crack in 4 large eggs and whisk until smooth. Now it’s time to bring in the chocolatey goodness! Melt 1 cup (120g) of dark chocolate chips or chunks with 1/2 cup (60g) of unsalted butter in a double boiler or in the microwave in 30-second increments, stirring between each interval. Once melted and smooth, let it cool slightly before whisking it into the sugar mixture. Don’t overmix! Now it’s time for the flour – 1 1/2 cups (190g) of plain all-purpose flour, to be exact. Whisk until just combined, then stir in a pinch of salt. Pour the batter into an 8-inch (20cm) square baking pan lined with parchment paper and smooth the top. Pop it in the oven for about 25-30 minutes or until a toothpick comes out with a few moist crumbs attached. Let those brownies cool completely in the pan before cutting them up and serving.
