Does this autumnal treat have a special place in your heart? The loaf is generously infused with aromatic spices and rich pumpkin puree, resulting in a sumptuously moist texture; for those who prefer a drier crumb, simply omit the flax egg in the recipe. Wrapped elegantly around a rich cheesecake filling, the crusty bread is finished with a delicate drizzle of icing and a satisfying crunch from toasted walnuts.

Pumpkin Cheesecake Bread [Vegan]

Vegan Pumpkin Cheesecake Bread: A Recipe to Savor

To create this scrumptious vegan pumpkin cheesecake bread, you’ll need the following ingredients:

1 can (15 ounces) of pumpkin puree
1 1/2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/4 cup sugar
1/4 cup non-dairy butter, melted
1/2 cup vegan cream cheese, softened
1 large egg replacement (such as flax or chia)
1 teaspoon vanilla extract

For the Bread:

  • 1 flax egg* (1 tablespoon ground flaxseed + 3 tablespoons water), or omit if you prefer a drier loaf.
  • 1 cup pumpkin purée
  • 3/4 cup coconut sugar
  • Approximately 60ml of liquid-state coconut oil or a suitable vegetable oil alternative.
  • Optional: 1/3 cup vegan sour cream (omit for a denser, less moist crumb)
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • The classic seasoning addition.

For the Cream Cheese Filling:

  • One 8-ounce container of softened vegan cream cheese.
  • 1/3 cup granulated sugar
  • 3 tablespoons all-purpose flour

For the Icing:

  • 1 cup powdered sugar
  • 3 tablespoons almond milk
  • Toasted walnuts, for topping (optional)

Vibrant Vibe: Delicious Vegan Pumpkin Cheesecake Bread Recipe

To Make the Batter:

  1. Preheat oven to 350°F. Coat a 9×5-inch loaf pan with a thin layer of coconut oil or vegan butter to ensure easy release and non-stick performance.
  2. Whisk together in a large bowl the initial nine ingredients, including ground nutmeg, until fully incorporated. Combine the flour, baking powder, baking soda, and optional salt, folding gently with a spatula or spoon until the ingredients are just incorporated without overmixing. Set aside. Two-thirds of the batter are poured into the prepared pan, its surface smoothed out by a gentle spatula stroke, carefully coaxed into every nook and cranny.
  3. Two-thirds of the batter is then poured into the prepared pan, with the top smoothed over using a spatula to ensure even coverage and a secure fit along the edges. Set aside.

To craft the creamy core of this delightful pastry:

  1. Combine all ingredients in a large bowl and whisk until well incorporated.

To Make the Bread:

  1. Spread the cream cheese filling evenly across the bread, using a spatula to gently smooth the surface, while also ensuring the filling is pushed into all corners and crevices.
  2. Smoothly spreading the residual pumpkin batter atop the cream cheese layer, use a gentle touch to avoid disrupting its uniformity, then carefully coax the mixture towards the periphery and corners of the baking vessel. Bake for approximately 48 minutes, or until the crust has puffed into a golden brown dome and the internal temperature reaches 190°F (88°C), as confirmed by a toothpick that emerges with only a hint of moisture and no remaining batter.
  3. Bake for approximately 48 minutes, or until the crust assumes a domed shape, a warm golden hue, and the core is thoroughly cooked, ascertained by a toothpick inserted into the centre emerging either completely clean or bearing only a few tantalizing crumbs, devoid of any residual batter. Although the top may appear to be done, it is still crucial to ensure the inside is fully cooked; thus, at the 35-minute mark, cover the pan with a sheet of foil, carefully draping it over the contents to maintain heat and prevent overcooking. Baking times may fluctuate significantly due to variations in the moisture levels of pumpkin, cream cheese, as well as regional climates and oven calibration discrepancies. Let bread rise; don’t rush the process. After baking, allow bread to rest undisturbed in the pan for approximately 15 minutes to allow internal temperature to stabilize and the crumb to set, then transfer it to a wire rack to finish cooling.

To Make the Icing:

  1. Combining the sweet and creamy icing ingredients, I top this decadent dessert with a crunchy sprinkle of toasted walnuts for added texture and flavor. Freshly baked bread can be stored airtight at room temperature for as long as seven days, while extended storage is possible by freezing it for a maximum of six months.
