  • 1 apple (cubed)
  • 8 ounces coconut milk
  • 1 onion
  • 2 garlic cloves
  • 1 tsp ground curcuma powder
  • 1 tsp ground cumin powder
  • Salt and pepper

Here’s How To Prepare A Delicious Vegan Spinach Curry In No Time!

Boil 1 cup of spinach leaves with a pinch of salt and immediately plunge into an ice bath. Then, puree it in a blender with 1/2 teaspoon of cumin powder, 1/2 teaspoon of coriander powder, 1/4 teaspoon of turmeric powder, and 1/4 teaspoon of red chili powder.

  1. Chop the onion finely and sauté it in a pan over medium heat, adding just enough oil to prevent sticking. Cover the pot with its lid and cook over medium heat for two to three minutes.
  2. Including fresh spinach leaves and a crisp apple adds a delightful contrast of textures and flavors to this dish. Cook the spinach leaves until they’re tender and significantly reduced in volume.
