For my nephew’s second birthday celebration this weekend, I sought to bring a treat that would be universally enjoyed by all attendees. My family often questions the unorthodox nature of my diet, so I sought to surprise them with a scrumptious, easy-to-make raw vegan dessert that would astound and delight. Thankfully, this creation met your intentions exactly.

Raw Choc-Mint Slice [Vegan]

Are you ready to indulge in a decadent and refreshing vegan treat? Here’s what you’ll need:

* 1 cup raw cacao powder
* 1/2 cup coconut oil, melted
* 1/4 cup maple syrup
* 1/4 cup unsweetened almond milk
* 1 tablespoon peppermint extract

  • ¾ cup of sunflower seeds
  • ¾ cup of almond flakes
  • ¾ cup of coconut
  • ¾ cup of soft dates
  • 2 tablespoons of cacao powder
  • pinch of good quality salt
  • 1 ½ cups of cashews
  • 3 tablespoons of rice syrup
  • 20 mint leaves
  • A dash of 1 to 2 teaspoons of concentrated green powder, such as wheatgrass, barley grass, or spirulina.
  • Five drops of high-quality, food-grade mint essential oil.
  • 2/3 cup of almond milk
  • One tablespoon of coconut oil has been melted.
  • Five tablespoons of rich, velvety cacao butter, now perfectly melted.
  • 1/2 cup coconut nectar
  • 3/4 cup cacao powder
  • 1/3 cup coconut oil

Vibrant Vegan Vibes

Craving a decadent, dairy-free treat? Look no further! With this easy recipe for Raw Choc-Mint Slice [Vegan], you’ll be indulging in a rich, refreshing delight that’s as kind to your taste buds as it is to the planet.

Raw Choco-Mint Filling

Ingredients:

* 1 cup cashew butter
* 1/2 cup coconut cream
* 1/4 cup maple syrup
* 1 tablespoon peppermint extract
* 1 teaspoon vanilla essence
* Pinch of sea salt

  1. Combine all the ingredients in a food processor, processing until the mixture forms a cohesive yet slightly textured dough with a stickiness that holds its shape.
  2. Position the cake base at the bottom of a well-greased and floured springform pan, ensuring it is evenly aligned before proceeding. Allow the chocolate mixture to chill and set in the refrigerator as you prepare the refreshing mint layer.
  3. Blend all ingredients together on high speed until the mixture is incredibly smooth and velvety in texture. It will likely take a minute or two to complete this task.
  4. Gently pour the refreshing mint layer over the base, ensuring an even distribution across its surface. Prior to adding the chocolate topping, refrigerate the mixture for a sufficient period to permit setting, thereby ensuring a smooth and even finish.
  5. To create the chocolate topping, combine all the ingredients in a heatproof metal bowl set over a pot of simmering water, allowing the mixture to gently melt as the steam from the water circulates through the bowl. Stir thoroughly and consistently throughout the process to guarantee a uniform melting of all ingredients.
  6. Once the mint layer has firmed up, carefully pour the chocolate layer over the top and refrigerate for a further 1-2 hours or preferably, allow it to set completely overnight.
  7. Cut into squares and enjoy!
