Raw Pistachio, Coconut, and Lime Cheesecakes Recipe: Vegan, Gluten-Free

Crust:

1 cup pistachios
1/2 cup unsweetened shredded coconut
1 tablespoon maple syrup
1/4 teaspoon salt

For the Base:

  • 1 cup Medjool dates
  • 1/2 cup desiccated coconut
  • 1/2 cup almonds
  • 1/2 cup pistachios
  • 3 tablespoons coconut oil
  • 1/2 teaspoon cinnamon
  • A pinch of salt

For the Filling:

  • Two cups of cashews, rehydrated by sitting submerged in water for a minimum of eight hours.
  • 1/4 cup coconut oil
  • 1 cup coconut cream
  • 1 1/2 cups desiccated coconut
  • 2 limes, juiced
  • One grated rind of a lemon.
  • 1 teaspoon vanilla
  • 1/4 cup maple syrup or brown rice syrup (note: omit for grain-free version)

For Garnish:

  • Crushed pistachios
  • Lime
  • Grated lime rind

Vibrant Vegan Vibes: Preparing Raw Pistachio, Coconut, and Lime Cheesecakes for a Deliciously Decadent Treat

  1. Position a square-shaped cake pan with parchment paper, reserving it for use later.
  2. Combine all fundamental components, transfer the mixture to a baking pan, compact it by pressing down firmly with your fingertips, and subsequently store it in the freezer.
  3. Combine all fillings until smooth and velvety, then pour them evenly over the prepared base. Use the back of a spoon to spread the mixture smoothly, eliminating any air pockets or imperfections. Finally, refrigerate the dessert for a minimum of four hours or preferably overnight to allow it to set properly.
  4. Retrieve contents from the freezer compartment and portion out into uniform square shapes. With the garnish artfully arranged, slice into bite-sized portions, and present with flair.
