Ingredients: • 2 lbs boneless chicken breast or thighs • 1 large onion, diced • 3 cloves of garlic, minced • 2 medium-sized carrots, peeled and sliced • 1 cup of mixed vegetables (peas, corn) • 1 can of diced tomatoes • 1 teaspoon ground cumin • 1 teaspoon smoked paprika • Salt and pepper to taste • 2 tablespoons olive oil Instructions: 1.
