I’m absolutely obsessed with the rich, chocolatey caramel flavor of the famous Samoas Girl Scout cookies—so much so that I’ve recreated them in a few different ways! Whether it’s my homemade samoas cookies, samoas baked oatmeal, samoa cookie protein shake or even a healthier apple samoas version, I can’t get enough.

Now, I’m bringing those flavors to breakfast with these Samoas overnight oats! They’re loaded with all the goodness of coconut, chocolate, and caramel, but packed with fiber and protein to keep you fueled all morning long.

Ingredients Needed

You only need a handful of simple ingredients to make these samoas overnight oats, and I bet you already have most of them on hand!

  • rolled oats – the base of these overnight oats! I like using old-fashioned rolled oats for the best texture, but quick oats will work if needed.
  • milk of choice – I love using light coconut milk for extra creaminess and a hint of coconut flavor, but almond milk or any other dairy-free milk works too.
  • chocolate protein powder – this boosts the protein content and adds a rich chocolate flavor. Feel free to use your favorite protein powder brand. If you use a plant-based protein powder you will likely need more milk, probably about 1-1 ¼ cup to get the proper consistency.
  • unsweetened toasted shredded coconut – adds that signature Samoa cookie flavor! I highly recommend toasting the coconut for the best taste.
  • date caramel – this natural, refined sugar-free caramel is made from blended dates and adds a deliciously gooey, sweet element. You can use store-bought or make my homemade date caramel.
  • chia seeds – helps thicken the oats and adds extra fiber, omega-3s, and protein.
  • chocolate chips – I like using Lily’s chocolate chips for a lower-sugar option, but any dark chocolate chips will work!

Substitutions & Customizations

I love how this overnight oat recipe comes together, but there are always ways to make them your own! Here are some ideas:

  • Extra indulgence: Drizzle melted dark chocolate over the top for a true Samoa cookie vibe.
  • No date caramel? Swap it for almond butter, peanut butter, or even a drizzle of maple syrup for sweetness.
  • Protein powder swaps: You can skip it or use 1 Tablespoon of cocoa powder for that chocolatey flavor. If omitting, add a little extra sweetener to taste.
  • More crunch: Add chopped toasted pecans or walnuts for a little extra texture and nutty flavor.
  • Want it thicker? Use a little less milk or add an extra teaspoon of chia seeds.

How to Make Samoas Overnight Oats

Step 1: Combine all ingredients except the toppings in a small container or mason jar. Cover the container with a lid and place in the fridge overnight (or at least 1-2 hours).

Step 2: When ready to serve add more milk if needed and top with toasted shredded coconut, a drizzle of date caramel and chopped chocolate or chocolate chips. Enjoy!

  • Use toasted coconut for the best flavor! Raw shredded coconut works, but toasting it brings out a deeper, nuttier flavor that makes these oats taste even more like a Samoa cookie. You can toast coconut by spreading it on a baking sheet and baking at 325°F for 3-5 minutes or by lightly toasting it in a dry skillet over low heat.
  • Adjust the liquid to your preference. The amount of liquid you use will depend on the type of protein powder you use. I used a beef isolate protein powder, but if you use a plant-based protein powder you will likely need more milk, probably about 1-1 ¼ cup to get the proper consistency.

How to Store Samoas Overnight Oats

In the fridge: Store overnight oats in an airtight container or mason jar in the fridge for up to 4 days. Give them a good stir before eating and add more milk if needed to loosen the texture.

Meal prep tip: If making multiple servings, store the oats in individual jars for easy grab-and-go breakfasts throughout the week. Keep toppings separate until just before serving for the best texture.

Are overnight oats eaten cold or warm?

Overnight oats are typically eaten cold, but if you prefer them warm, you can microwave them for about 30-60 seconds before adding toppings.

Can I use steel-cut oats instead of rolled oats?

I wouldn’t recommend it, as steel-cut oats won’t soften as much overnight. If you want to try, soak them for at least 8-12 hours and add extra liquid.

Can I freeze overnight oats?

The texture of overnight oats doesn’t hold up well to freezing, so it’s best to enjoy them fresh from the fridge
