Once the beef is cooked, add 1 onion, diced, and 2 cloves garlic, minced, to the skillet. Cook until the vegetables are soft and fragrant, then season with salt, pepper, and your favorite herbs. Meanwhile, boil 2-3 large potatoes in a pot of salted water until they’re tender. Drain the potatoes and add 1/4 cup milk, butter, salt, and pepper to mash them smooth and creamy. To assemble the shepherd’s pie, spread half the mashed potatoes in the bottom of a 9×13-inch baking dish. Top with the beef and vegetable mixture, then finish with the remaining mashed potatoes. Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and continue baking until the top is golden brown and the filling is hot and bubbly. Serve hot and enjoy!
