What’s the Best Way to Make Soft and Chewy Vegan Pretzel Rolls?

1/2 cup warm water
1/4 teaspoon active dry yeast
1 tablespoon sugar
3 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 cup vegan butter or margarine, melted

  • 2 cups plain flour
  • Two cups of robust white flour or high-protein bread flour.
  • 1 tsp dried active yeast
  • 1 1/2 teaspoons fine sea salt
  • 1 tablespoon olive oil, plus additional as needed for kneading
  • 11 fl oz water
  • 6 cups water
  • 1/4 cup baking soda

Soft and Tasty Vegan Pretzel Rolls: A Step-by-Step Guide

  1. Combine the flours in a large bowl. Positioning the salt on one side of the bowl and the yeast on the other is crucial for optimal fermentation in this recipe.
  2. Combining the olive oil and water, I then stirred the mixture with a sturdy wooden spoon, gradually coaxing the ingredients into a rough, shaggy dough.
  3. Gently lubricate your workspace with a thin layer of olive oil and carefully dispense the dough onto it. Work the dough for approximately 5-10 minutes, until it develops a silky, smooth texture.
  4. The dough returns to a lightly oiled, pristine bowl, where it’s gently enveloped by a soft tea towel. Allow the dough to ferment for approximately two hours or until it has expanded to roughly double its original volume. For optimal flavor, allow your dough to rise at a leisurely pace, rather than rushing the process by placing it in an overly warm environment.
  5. After the dough has risen for two hours, move it to a lightly floured work surface and gently deflate the yeast by pressing down with your fingertips.
