Looooove is in the air! Because of the irresistible allure of freshly baked cherry doughnuts wafting a sweet and tantalizing aroma. Mmmm. A delightful treat to share with a loved one or indulge in yourself?

Very Cherry Doughnuts [Vegan]

What’s needed for a sweet indulgence?

  • One flaxseed-based vegan substitute for a chicken egg (made by mixing one tablespoon of ground flaxseed with two tablespoons of water).
  • 1 cup all-purpose flour
  • ⅓ cup agave
  • ½ cup soy milk
  • ¼ cup vegan butter
  • Optional: 1 teaspoon of cherry juice, which, while not essential, enhances the overall taste.
  • 1 tsp vanilla
  • 1½ tsp baking powder
  • Dash of salt
  • 1/3 cup diced/chopped cherries
  • A few drops of red food colouring or, for a more natural alternative, 2-3 tablespoons of beet juice can be used to create a soft pink hue.
  • Approximately 1-2 cups of confectioners’ sugar; adjust to achieve the preferred texture.
  • 1 tbs water
  • Two to three drops of vibrant red dye (or as a creative alternative, a few drops of beet juice for a natural pop of colour)

What’s Your Flava? Get Ready for These Vegan Cherry Doughnuts!

  1. Combine 1 tablespoon of ground flaxseed with 3 tablespoons of warm water in a small bowl to create a flax “egg,” whisk until well combined, and set aside.
  2. Combine in a bowl the agave nectar, soy milk, flaxseed substitute for eggs, melted butter, cherry juice, and vanilla extract to form a smooth mixture.
  3. Gradually incorporate the dry ingredients – flour, baking powder, and salt – into the mixture, ensuring a thorough amalgamation.
  4. Preheat the donut pan by greasing each cavity with a thin layer of cooking spray or oil, then fill the prepared molds evenly with the desired amount of donut batter.
  5. Preheat to 350°F and bake for approximately 15 minutes; adjust the cooking time as needed based on your oven’s specific characteristics. These toys will have a delightful “bounce” to them when gently patted with your fingertips.
  6. Done? As you mix the icing with ease?
  7. To make icing, whisk together granulated sugar, water, and a few drops of food coloring until smooth.
  8. Indulge in the sweet freedom to customize your donuts with a generous spoonful of glaze, followed by a scattering of sprinkles, chocolate chips, or any other whimsical topping that stirs your imagination!
