These Whoopie Pie Cupcakes with Red Velvet Frosting are a fun spin on the average cupcake. The red velvet frosting is a rich buttercream, flavored with red velvet cake mix! This cute dessert recipe is my new favorite way to serve a cupcake.

A Cute and Simple Cupcake Recipe

So the idea for these cupcakes was more about function than aesthetics.

It just so happens that they ended up being quite adorable!

It’s like they are the yoga pants of cupcakes.  Comfortable, practical and (if you choose the right pair) all around delightful.

You see there are people like my husband and his friends who don’t like to bite down on a load of frosting.

What in the word?

The Best Whoopie Pie Cupcake Recipe

So they developed this way of eating the cupcake…ripping off the bottom, sticking it on the top and biting in…essentially making a sandwich.

So I thought I might do the heavy lifting for them.

And ta-da.. the Whoopie Pie Cupcake was born.

Patent Pending.

A Homemade Red Velvet Frosting

Honestly the whole point of these cupcakes was the frosting.

We need to discuss this frosting, y’all.

It’s Red Velvet Frosting made by mixing the cake mix right in.

So basically what I’m saying is this whole recipe is a two-fer of brilliance.

How to Make Whoopie Pie Cupcakes with Red Velvet Frosting:

First go ahead and make your cupcakes.  I made my favorite Devil’s Food Cupcakes.

And then the frosting went together really fast.  I grabbed this box of Red Velvet Cake mix…

And added 1 cup of the dry mix into the frosting…

Beat that together with some butter, powdered sugar and milk…

I used a large Wilton 6B Tip on a piping bag…

And here’s the whoopie pie trick.

Just take a knife and cut off the dome of your cupcake…

And set the tops aside for a quick minute.

Frost the cupcakes as you would…

And then just press the top back on gently…

You could easily make it all about the frosting too… Nothing wrong with that!

  • 1 cup dry Red Velvet Cake Mix
  • 3 cups powdered sugar
  • 1/4 cup milk

Fresh Fusion: Watermelon Juice Crafting & Exploration
Crisp-skinned, succulent Assam duck with a rich, aromatic sauce. Ingredients: – 1 duck (about 1.5 kg), patted dry – 2 tbsp vegetable oil – 2 cloves garlic, minced – 2 tsp grated fresh ginger – 1 tsp ground cumin – 1 tsp coriander powder – 1/2 tsp turmeric powder – 1/2 tsp cayenne pepper – 1/2 cup Assam tea leaves (or strong black tea) – 1/4 cup soy sauce – 2 tbsp honey – 2 tbsp apple cider vinegar – Salt, to taste – Fresh coriander leaves, for garnish Instructions: 1. Preheat oven to 220°C. 2. In a small bowl, mix together oil, garlic, ginger, cumin, coriander powder, turmeric powder and cayenne pepper. 3. Rub the mixture all over the duck, making sure it’s evenly coated. 4. Roast the duck in the preheated oven for about 20-25 minutes or until it reaches your desired level of crispiness. 5. While the duck is roasting, make the Assam sauce by steeping the tea leaves (or black tea) in boiling water for about 5-7 minutes or until strong and fragrant. 6. Strain the tea and discard the solids. 7. In a small pan, combine soy sauce, honey, apple cider vinegar, salt, and the tea-infused liquid. 8. Bring the mixture to a simmer over medium heat and cook for about 2-3 minutes or until slightly thickened. 9. Remove the duck from the oven and let it rest for a few minutes before carving. 10. Serve with the warm Assam sauce spooned over the top, garnished with fresh coriander leaves if desired.
